Carrot Cake Overnight Oats

Everyone has strong opinions on carrot cake as a dessert. You had strong enough opinions that you clicked on this recipe to see what it was all about.
And carrots for breakfast may be as unlikely as carrots for dessert, but with those warming spices and pecans mixed in, we're of the (strong) opinion that this decadent breakfast will have you going to bed looking forward to your alarm clock.
Carrot Cake Overnight Oats Ingredients
1/3 cup Easy Morning Mix
1/2 cup of milk of choice
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoons shredded carrots
1 tablespoon pecans, chopped
1 tablespoon raisins or white chocolate chips (optional)
Cheesecake White Chocolate Ganache
1/3 cup greek yogurt
2 tablespoons white chocolate chips
1 1/2 tablespoons cream cheese (room temperature)
Instructions
Combine Easy Morning mix, milk, cinnamon, nutmeg, carrots, pecans, and raisins in a bowl or jar. Stir well and refrigerate for 1 hour.
Make the white chocolate ganache. Microwave white chocolate in a small bowl. Whisk in greek yogurt and cream cheese.
Remove the oats from the refrigerator and pour the ganache on top. Put back in the fridge overnight.
In the morning, top with more carrot shreds and pecan pieces. Enjoy!
